QUICK – YUMMY – HEALTHY

I love french toast.  Talk about YUMMY COMFORT FOOD.  I remember coming home from college and my Dad would cook me delicious warm french toast per my request.  This past week my girls came home from school and were famished.  They have their lunches really early in the day at school.  So, for me to get them out the door for gymnastics/dance class in 15-20 minutes is a challenge.  I decided to make french toast.  It is quick.  It satisfies the “carb cravings” and it is high in protein.  I am not of hugs fan of lots of grains.  But I choose my breads wisely and also use gluten-free.  I personally am vegan.  But my family eats a wide-range of foods.  Improvisation is key!  

With the french toast, I add cinnamon and/or pumpkin pie spies while I am cooking it.  Cinnamon naturally controls blood sugar too!  That it helpful with wired children after school and it is naturally delicious.

The kabobs are a cute way to present them and I like to also had fruit in-between the french toast pieces.  Give it a try…

INGREDIENTS:

  • 3 EGGS (PREFERABLY ORGANIC FREE-RANGE)
  • 2 SLICES OF ORGANIC BREAD (PREFERABLY ORGANIC AND GLUTEN-FREE)
  • 2 TBS RAW ORGANIC COCNUT OIL
  • 1 TBS CINNAMON AND/OR PUMPKIN PIE SPICE
  • 3 TBS ORGANIC MAPLE SYRUP
  • ADD-ONS OPTIONAL – RAW UNSWEETENED DRIED COCONUT, RAISINS, BLUEBERRIES, STRAWBERRIES, RAW NUTS…

MAKE IT:

  • IN A WIDE FLAT BOWL, CRACK 3 EGGS AND WHIP.  
  • STIR IN SPICES
  • ADD BREAD TO EGG MIXTURE AND MAKE SURE IT SOAKS AND SATURATES THE BREAD
  • PREP PAN WITH COCONUT OIL ON LOW-MEDIUM HEAT
  • ADD MORE CINNAMON AND POUR ON A LITTLE BIT OF MAPLE SYRUP
  • ADD FRENCH TOAT FOR 45 SECONDS AND WATCH UNTIL GOLDEN-BROWN AND FLIP
  • THEN CUT-UP TOAST INTO 6’S AND PUT ON KABOB STICKS
  • OPTIONALLY, SPRINKLE ON RAISINS, COCONUTS, NUT OR KEEP ADD-ONS ON THE TABLE FOR THE KIDS TO SPRINKLE ON THEMSELVES

It also an nice alternative to pancakes!
